Churmur is a popular Calcutta street food dished out by phuchkawalas across the city with aplomb. A type of chaat and one of the more inspired offerings to come out of a phuchkawala's cart, churmur is crispy, tangy, moderately healthy and extremely easy to make. It contains the usual suspects—potatoes, motor dal (whole yellow peas), tamarind, green chillies, coriander, and a variety of spices and seasoning—all mixed together and heaped upon a shalpata plate.
