It seems like there is always too much zucchini when it’s in season and ready in the garden. Here’s a roasted zucchini dip that I love to blend up in a fresh and healthy way!
- 1 lb zucchini (about 2 medium), cut into 1/4-inch planks
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup Greek yogurt
- 1/3 cup tahini
- 2 cloves garlic
- 2 oz feta cheese
- 2 tbsp chopped dill
- 2 tbsp lemon juice
- 1 tsp kosher salt
- 1/2 tsp black pepper
