Amsul Kadi is a popular Maharashtrian curry recipe that is quick and easy to make with limited ingredients. This kadi goes well with bhakri, steamed rice or just by it self. Amsul Kadhi is best to be sipped hot in winters.
Ingredients:
2 tsp Ghee
1 tsp Cumin Seeds
Asafeotida
1/4th tsp Turmeric Powder
7-8 Curry Leaves
1 Green Chilli
7-8 Dry Mango Pieces (Amsul)
3 tbsp Gram Flour (Besan)
4 tbsp Jaggery
Coriander & Cumin Seeds powder
Garam Masala
Coriander Leaves
Water
Salt to taste
Method:
- First make a thick paste of gram flour and water. Keep it aside.
- In a pan heat some ghee.
- Add cumin seeds, asafeotida, curry leaves, green chillies and water.
- Once the water starts to boil add dry mango pieces.
- Then add coriander cumin seeds powder and garam masala. Give a stir.
- Then add the gram flour paste and salt. Keep stirring. Also add little water and turmeric.
- Then add jaggery and stir well. Let it come to a boil again.
- Lastly add coriander leaves and switch off the flame.
- Amsul Kadhi is ready to be served hot!
