Easy lentil flatbread
2 cups hot water
1 cup lentils (red works great but I've used many other varieties with success: you may need to add more water for larger lentil varieties)
Blend for 1 minute in high speed blender or until totally smooth
Pour onto a parchment lined baking sheet and bake at 400F for 20 minutes or until done.
Notes:
-Feel free to add spices into the blender or on top for a fun twist.
-Option to cook this batter on a skillet as individual "pancakes" as well
-There may be an air bubble which makes the flatbread rise during the baking process, but it's okay!
