Instant Bitter Melon Pickles - പാവയ്ക്കാ ഉപ്പിലിട്ടത്
Combine water vinegar and salt. bring it to a boil. allow the combined Mix to cool down room temperature. Slice all bitter melons into halves lengthwise. Scoop out all seed and white flesh. Slice it into ¼ in thickness.
Ingredients

Bitter Melon - 2 lbs
Sesame oil - 2 tbsp
Mustard - 1 ½ tsp
Fenugreek - 1 tsp
Garlic - 5 cloves
Red Chilies - 4
Green Chilies - 5
Curry Leaves - ½ springs of leaves
Turmeric Powder - ½ tsp
Vinegar - 1 cup
Salt - ½ cup
Water - 2 cups

Step 1: On a medium pan, heat up sesame oil, once the oil is hot, add mustard. Allow mustard to crackle, then add fenugreek. Lower the heat so that it doesn't burn the fenugreek and mustard.
Step 2: After adding the fenugreek add rest of the ingredients such as garlic, green and red chilies, curry leaves and turmeric powder. Sauté’ for 30 sec and add all of the sliced bitter melon and mix well. Once it is mixed well, we can convert it to a mason jar. Fill up the mason jar with bitter melons and vinegar mix.
