Think devil dogs with a better cream to cake ratio and a freshly delicious sweetness - these are amazing! INGREDIENTS:
COOKIE/CAKE:
Mix together dry ingredients -
2 cups flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
Mix together below wet ingredients with hand mixer:
1 cup light brown sugar
1/2 cup buttermilk (or use 1/4 sour cream and 1/4 whole milk)
1/2 cup vegetable oil
1 egg
1 tsp vanilla
Using hand mixer, add dry ingredients to wet ingredients, then add
1/2 cup hot water
Drop onto parchment paper lined cookie sheets and bake at 375* for 8-10 min. Let cool completely.
FILLING:
Cream together (by hand or with hand mixer)
2 sticks softened butter
2 1/4 cups powdered sugar
Fold in 10 oz marshmallow fluff by hand
and then fill those cooled cakes and ENJOY!!!!
