The easiest casserole ever! Chicken & quinoa casserole - gluten-free and delicious!
Ingredients:
100 grams of quinoa,
4-5 green onions,
2 carrots,
1/2 large onion or a medium one,
4-5 cloves of garlic,
fresh parsley,
5 cherry tomatoes or a regular tomato,
370 g chicken breast,
2 tbsp oil,
240 ml (1 cup) water/chicken broth,
salt and pepper.
Mix all the ingredients and bake in a preheated oven at 400F for 1 hour (60 minutes).
Once baked for one hour, turn off the oven and let the pan in the oven for at least 30 more minutes.
