Ingredients:
7-8 apples
1/2 cup -100 g sugar
1 tsp -5 g cinnamon
1 1/8 cup -250 g cold butter
3 1/2 cups-500 g sifted flour
2 eggs and 2 egg yolks
1 cup -125 g icing sugar
2 Tbsp -30 g sour cream
1/2 tsp -3 g salt
1 tsp-5 g lemon zest
1 tsp -5 ml vanilla extract
Directions:
1. Peel 7-8 medium-sized apples and grate them. Place the grated apple in a large saucepan with the sugar and cinnamon and mix until combined. Cook over medium heat for 10 minutes.
2. In a bowl, add the cubed cold butter and flour. Mix until you obtain a sand texture with small pieces of butter.
3. Add the eggs, powdered sugar, sour cream, salt, lemon zest and vanilla extract. Mix until a smooth dough forms. Cover the dough with plastic wrap and refrigerate for 1 hour.
4. Divide the chilled dough into two parts. Roll the first piece until it is 0.5 cm in thickness and approximately the size of the pan.
5. Prepare a 33cm x 23cm/13inch x 9inch pan with parchment paper and place the rolled dough at the bottom.
6. Add the apple mixture on top and spread until it is evenly distributed. Roll the second piece of dough and place over top of the apple layer.
7. Brush with eggwash and bake 45-50 minutes or until golden brown in a preheated oven at 338F.
8. Let cool completely before cutting into it.
