Healthier Versions recipes for macronutrient restrictions. I share these recipes because I know what it's like to live with dietary restrictions. Because of this eating lifestyle I have been able to avoid being put on 4 medications, maintain a 17-pound weight loss, maintain a blood pressure range of the mid 120's to the low 130's, as well as maintain an a1c in the low 5's.
Today's recipe is awesome. I saw a picture similar to this one and figured I can make this. My Colorado niece suggested the veggies. The rest is history. It may seem like a long recipe, but this is a complete meal. All you need now is dessert. Check out Episodes 3, 5, 10, 11, 15, 16, 28-30, 33, 34, 39, 41, 43-45, 80, 83, & 85 for several idea. Meatloaf Shepherd Pie

Ingredients
Bison 1 lb
Red Bell Pepper ¼ lg
Sweet Onion ¼ sm
Mrs Dash Garlic & Herbs ½ tsp
Mrs Dash Onion & Herbs ½ tsp
Kosher Salt ¼ tsp
Egg 1 lg
Panko Bread Crumbs ¼ cup
Zarda BBQ Sauce 6 tbsp
Catsup (Hyvee-1/2 & 1/2) 6 tbsp
Shredded Cheese(Ched/Monterey) ½ cup
Mashed Potatoes
Potatoes (5-small/3-medium) or 2 reg
Butter-Unsalted 2 tbsp
Margarine 2 tbsp
Kosher Salt ¼ tsp
Mrs Dash Garlic & Herbs ½ tsp
Shredded Cheese(Ched/Monterey) ½ cup
Peas (Frozen) 1 cup
Directions
1) Preheat oven to 350 degrees
2) Chop veggies
3) Put meat in a medium bowl
4) Add veggies, seasonings, egg, & breadcrumbs
5) Add 2 tbs each of bbq sauce & catsup
6) Combine well then separate into 4 pcs
7) Shape into small meatloafs and place each piece onto a long pan
8) Bake for 40 minutes
9) Meanwhile, peel & quarter potatoes
10) Rinse then put into medium pot of water
11) Bring to a boil and cook for 20-25 minutes
12) Keep water and place the potatoes into a medium bowl
13) Add peas to potato water, add a little Mrs Dash seasonings to pot
14) Add butter, margarine, 1/2 cup cheese & seasonings to potatoes & mash
15) Oil or spray 9x11 baking pan then evenly spread mashed potatoes on top
16) Drain & evenly layer peas on top of potatoes
17) Evenly place cooked meat loaf over the peas
18) Combine remaining bbq sauce and catsup and evenly spread on meat loaves
19) Sprinkle remainder of cheese over meat loaves
20) Bake for 7 minutes
21) Enjoy!!!
