Plantain porridge or Ukang Ukom is a special delicacy prepared during occasions in Akwa Ibom and Cross River States such as traditional marriages/weddings, coronations, child dedications, burials, etc. It is often shared to special guests. I added a twist to it by adding coconut milk. This method takes this recipe to another level entirely.
