Crispy Pata is a Filipino dish: Crunchy Pork skin & savory tender meat Baked & roast until skin is puffed and crisp while the meat is tender moist.

PATA RECIPE
Ingredients:
8-12 pounds Pork Shoulder or Picnic Shoulder, bone-in, skin-on
Kosher salt

Dipping SAUCE
Ingredients:
1 small onion
4 Thai chilis
5 tablespoon soy sauce
1 cup vinegar
1/4 cup sugar
1/2 teaspoon black pepper
Directions:
1. Adjust oven rack to middle position and preheat oven to 250*F (121 *C).
2. Line a rimmed baking sheet with aluminum foil and set a wire rack inside it. Lightly pat the pork and season with salt and oil for the meat not to get dry.
3. Transfer to oven and roast for 8 hours.
4. Remove pork from the oven. Increase oven to 500 degrees Fahrenheit and allow to preheat. Return pork to the oven and roast until skin is blistered and puffed, rotating every 5 minutes for about 25 minutes total. Remove from the oven and allow to rest for 15 minutes before chopping and serving. Serve with homemade vinegar sauce and ENJOY!
