Want to know a secret hack for great pulled pork from an Instant Pot? It's the brine from a jar of pickles. It's got aromatics, seasonings, sugar, vinegar, everything you need to make great pulled pork.
And don't just think dill pickle brine. To be honest, our favorite combo is half-and-half sweet-and-sour pickle brine and the brine from a jar of pickled jalapeño rings. We've used the brine from hot dills, from pickled okra, even from pickled green beans.
So save that brine. Even freeze it. When you get enough, you'll be ready for some of the tastiest pulled pork we've ever created.
This recipe works in a 6- or 8-quart Instant Pot. If you want to use a 3-quart Instant Pot, you must halve all the ingredients. If you want to use a 10-quart Instant Pot, you must increase almost all of the ingredients by fifty percent except you must add 1/2 cup chicken or beef broth to the increased amount of pickle brine.
Here are the ingredients:
3 pounds boneless pork shoulder, cut in half, any large chunks of fat removed
1 teaspoon dried dill
1 teaspoon ground coriander
1 teaspoon ground dried mustard
1/2 teaspoon red pepper flakes
1 teaspoon table salt
1 1/2 cups jarred pickle brine (see the notes above for further details)
Serve this drained pork on tortillas with lots of Sriracha!
