Hiya,
This is my favourite lemon drizzle cake, which happens to be vegan! I make it a lot...because it's so YUM and takes hardly any time at all to make. SO EASY!
Recipe:
In a bowl mix together:
275g self-raising flour
130-140g caster sugar
zest of one lemon
1 tsp baking powder
MIX!
Then add:
100ml vegetable oil, juice from 1/2 a lemon and 170ml cold water.
Mix until combined.
Pour into a 2lb lined loaf tin and bake in a pre-heated 180'C fan oven for 30 minutes. Then cover with foil and give it another 10 minutes.
Whilst it is cooking, make a tasty drizzle by juicing half a lemon - about 1 tablespoons worth (use the one from earlier) and then adding & mixing in icing sugar until you get a thick paste (but one you can still pour with).
Let it cool and then pour your drizzle on.
