Ingredients:
2 cups – Rice Flour
2 cups – hot water
Makes 5 to 6 bhakris.
Method:
Take rice flour in a flat plate/paraat.
Mix in very slowly with equal amount of hot boiling water.
The flour to water ratio has to be equal, to make the bhakris really soft.
Once warm to the touch, knead in the flour with hand for about 1/2 minute.
Add some regular cool water to completely knead the flour to make soft pliable dough.
Once the kneaded dough comes together, break into 5 or 6 balls.
Knead the ball well and flatten it out a little.
Roll sides of the ball on a rolling board to prevent the borders from cracking.
Add some dry flour on the center of the rolling board.
Hand-pat the bhakris into a smooth round flat shape, adding some flour to the top side too.
As the bhakri grows in size, both hands could be used to pat it to full size.
Transfer the bhakri to a heated pan/tava, flipping the bottom side up.
Spread some water on the entire bhakri on the tava, either with the palm or with a soft cloth.
Any part of the bhakri that does not get the water covering will turn out dry and may also crack.
Let sit on one side for only half a minute or else the bhakri will crack!
Flip the bhakri and let roast for 1.5 minutes on the other side.
Again flip over and press lightly with a flipper/kaltha, to fluff the bhakri.
Roast the borders well with the kaltha.
Enjoy with any veg or non-veg dish.
