••• Do you know which Japanese stock, we called DASHI ! This episode is one of very popular base stock in Japan :) So I will show you how to make our NIBOSHI stock & my recommendation simple Ramen ! •••

••• Today’s stock from NIBOSHI small dried sardines fish •••
// How to make DASHI //
Dried small sardines version for 2 pers
NIBOSHI 15g / Water 500ml
1. At first, you remove the guts from a fish and head.
2. Soak in the 500 ml water about 30min
3. You cook with midim heat until boiled and you remove the mousse and keep about 5-10 min
4. You pass the strainers for separate this stock and sardines
// My advice //
It’s better for 2days if you can’t use all, it’s better put on freezer until 3weeks please

/// NIBOSHI RAMEN very simple version ///
Ingredients for 1 Person
NIBOSHI DASHI stock : 300ml
Soy sauce : 3 Tablespoon
Cooking Sake : 1 Tablespoon
Sesame oil : 1 Tablespoon for cook with fish
Black pepper : Your preference amount
Boiled Egg : If you want
Scallions : Your favorite vegetable
Meat : If you want
1. First, I use to try all so These pieces when I divided head and guts for Dashi, you crush or make a powder, after cook with 1 tablespoon of sesame oil
2. Next, for Ramen Soupe add 3 tablespoons of soy sauce and 1 tablespoon to 300 ml of Niboshi dashi
3. And make a cook the noodles in another pot, Please prepare vegetables and meat if you like toppings
4. For keeping hot soupe, it better put on boiled water in your bowl. When your noodles and topping done, you throw away the hot water in the bowl and you put on all.

In Japanese cooking way, we appreciate our ingredients so I suggest you for head and guts crush or powder for topping with sesame oil :)
