We prepared this Al Faham Chicken using homemade Arabic Masala
****** AL FAHAM CHICKEN RECIPE ******
INGREDIENTS:
- 1 Whole Chicken
For FIRST MARINATION
- 2 tbsp Ginger Garlic Paste
- 1 tbsp Pepper Powder
- 5 tbsp Hung Yogurt
- 2 tbsp Lemon Juice
- Salt
For Arabic Masala Preparation
- 2 ½ tbsp Coriander Seed
- 1 tbsp Black Pepper
- 10 No.s Red chilli
- 1 tbsp Fennel seed
- 1 ½ tbsp. Cumin seed
- 6 No.s Cardomom
- 5 Piece Cinnamon
- 8 No.s Cloves
For Second Marination
- Arabic Masala
- 1 Sliced Tomato
- 1 tbsp Garlic Powder
- 2 tbsp Onion Powder
- ½ cup Coriander Leaves
- Salt
METHOD
First tender the chicken with a meat mallet. Apply first marination ingredients thoroughly, Set this aside for 30 Min to 1 Hr.
Now place a small frying pan over medium heat, Add the Arabic masala spices to it. Roast it well until the raw smell goes off, Grind it to a fine powder.
To prepare second marinade grind all the second marination ingredients in to a fine paste in a mixer jar. Apply this masala thoroughly. Set this aside for 3 to 4 hours minimum. It’s good to keep overnight.
Preheat the oven for 20 Mins at 220° C. Arrange the chicken on greased oven tray and cook it for 40 to 50 minutes. In between change the sides to cook it evenly.
Now our delicious Al Faham Chicken is ready to eat.
