KHEER MALPUA RECIPE
INGREDIENTS
FOR KHEER
1 Cup Rice
1 Cup Sugar
2-3 ltr Milk
¼ tsp Cardamom
Few Nuts for Garnishing
FOR MALPUA
1 Cup Gur (Jaggery)
2 Cup Water
2 Cup Wheat Flour
3 Cups Oil/ Ghee
2 Tbsp Cashew powder
DIRECTIONS
Wash rice and soak it for one hour. Sieve the rice through appropriate strainer. Take a pot add milk and soaked rice in it. Cook rice in milk for 30 minutes and stir continuously. Add cardamom and mash the rice properly to give smooth texture. Again add milk and cook for 30 minutes. Next add sugar and milk in it if the kheer consistency is thick and stir gently. Cook again for 15 minutes and kheer is ready with creamy consistency. Garnish kheer with nuts of your choice.
Soak jaggery in water for 30 minutes and sieve it to remove dirt. Now take a bowl add wheat flour and jaggery water to make a smooth batter of flowing consistency. Take a wok add oil in it. Heat the oil completely and pour batter in it with the help of any spatula or ladle. Flip the malpura if required until it is not completely cooked from both sides. The color of malpura should be golden brown. Repeat this process for more malpuras. For cashew malpura add cashew powder in the batter and mix it well. Again pour batter into the hot oil and cook malpura from both the sides. Now malpuras are ready to serve.
Now kheer and malpuras are ready to serve. Enjoy it.
