Greenpeas egg masala
2 cups fresh Greenpeas or frozen peas
Coconut oil
2 cups finely chop onions
1 tbs finely minced ginger
2 tbs finely minced garlic
4 finely chopped green chillies
1/4 cup tomato ( this is to saute with onions )’
11/2 chopped tomatoes for grinding also
2 tomatoes cut into big chunks for restaurant look
2 cups thick coconut milk
( for extra richness )to grind
3 cashews
5 white kismiss
For the dry masala ( dry roast )
3 medium size cinnamon sticks
5 cardamom
5 cloves
1 tbs fennel seed
1 tbs Kashmiri chilli powder
1 tsp chilli powder
1 tbs coriander powder
1/2 tsp turmeric powder
Method
Cook green peas adding salt and turmeric, then in a pan add oil , saute onions , ginger , garlic , green chillies, then add 1/4 cup chopped tomatoes again saute , in a different pan add oil and 11/2 cup tomato, saute until mushy , once it cools add to a mixer grinder and make fine paste , add this paste to the sautéed onions , again saute until oil separate,
Then dry roast masala ,then powder this to fine powder , add this powdered masala and saute until rawness goes then add cooked green peas , mix really well , then add 2 tomatoes in big chunks for restaurant look , now add 2 cups coconut milk , then if you prefer more rich and light sweet taste add cashews and kismiss, again cook for 1 minute on low flame , garnish with coriander leaves
