Welcome to DforDivya Kitchen! In this video, I'm sharing a healthy and delicious recipe for Vazhakoombu Thoran, also known as banana flower stir fry, koombu thoran, kudappan thoran, etc. This nutritious vegetarian dish is not only tasty but also great for diabetics! 🌿
Ingredients:
• 1/2 cup mung beans
• 1 medium banana flower (6 cups, finely chopped)
• 1 ½ cups water
• 1 tbsp oil
• 1 ½ cups grated coconut
• ½ tsp turmeric powder
• ½ tsp cumin powder
• 2 cloves garlic (crushed)
• 5 small green chillies (crushed)
• 1 tsp mustard seeds
• 3 dry red chillies (halved)
• A few curry leaves
• ¾ cup chopped onion
• 1 tbsp salt
Cooking Steps:
1. Cook mung beans with water (7 whistles: 1 high heat, 6 medium heat).
2. Prepare banana flower by washing and draining.
3. Combine grated coconut with turmeric, cumin, garlic, and green chillies.
4. Temper mustard seeds, dry red chillies, and curry leaves.
5. Sauté onions, add banana flower, and cook with salt.
6. Gently mix in cooked beans and coconut mixture.
7. Cook for an additional 2-3 minutes.
