Bangalore Style Masala Poori
Portion size: 5-6 servings
Preparation time: 15 mins
Cooking time: 30 mins
Calories: 165 kcal per serving
Ingredients:
Dry peas 1 cup
Potatoes peeled 2 pcs
Oil 1 tbsp
Saunf 2 tbsp
Onion chopped 1 cup
Chopped ginger ½ tbsp
Green chillies slit 2-3 pcs
Mint leaves handful
Coriander leaves handful
Black pepper 10-12 pcs
Cloves 8-10 pcs
Cinamon 1 inch
Coriander seeds 1 tbsp
Mace 1 pc
Jeera ½ tbsp
Dry red chilli 1 pc
Tomato chopped 2 tbsp
Nylon sev for garnish
Pooris 10-15 pcs
Soak dry peas for overnight.
In a pressure cook, add soaked dry peas, potatoes, salt, turmeric powder, water and cook it for 4-5 whistles.
Heat a pan, add oil, saunf, garlic chopped, ginger chopped and saute.
Then add chopped onion, green chillies and cook until it becomes soft.
Then add amchur powder.
In a mixer jar add mint leaves, coriander leaves, cooked onion mixture and make a paste of it.
Heat a pan, add coriander seeds, jeera, black pepper, mace, dry red chilli, cloves and roast them on low heat.
Transfer it to a mixer jar, add amchur powder and make a fine powder.
Open the pressure cooker, remove potatoes, some peas and mash them with a masher.
Transfer peas to a pan, add mashed potatoes & peas, green paste and cook them for a while.
Adjust the salt as per taste.
Now, in a plate crush some pooris, pour peas mixture, mithi chutney, green mint chutney, chopped onion, chopped tomatoes, some nylon sev and serve Street Style Masala Poori.
For masala:
Coriander leaves ..1/2 a bunch
Mint leaves..1 bunch
Ginger...1" two pieces
Garlic..o4-5 clove
Fennel seed 1 tsp
Onion chopped 1/2 cup
Green chilli..4-5(or acc. To taste)
Amchur powder 1 tbsp
Cumin powder..2 tsp
Garam masala ..2 tsp
Green chilli sauce..2 tsp
Salt
Black salt 2 tsp
Other ingredients:
Dry peas..500 gms
Potatoes 2 big
For serving :
Thin sev
Chopped vegetables like tomato ,onion,carrot .
Chopped coriander for garnishing
Take a pressure cooker, add soaked white peas, potatoes, water and cook it for 3-4 whistles.
Heat a pan, add oil, fennel seeds and crackle them.
Then add chopped ginger, chopped garlic, chopped green chillies and saute them.
Add chopped onion and cook for 2-3 mins.
Then add mint leaves, coriander leaves and saute them for 1 min.
Transfer all the mixture to the mixer jar, add cumin powder, garam masala, amchur powder and make a paste of it by adding some water.
Ground some white peas and add back to it.
Add the paste to the white peas and cook it for 10 mins.
Add grated boiled potato.

Puri + Masala + Mithi chutney + chopped onion/tomato/coriander + chaat masala
