Ingredients
2 lb boneless skin on chicken thighs, cubed
2 cloves garlic, grated
1 inch knob ginger, grated
3 Tbsp soy sauce
1 Tbsp sesame oil
½ tsp black pepper
1 ½ Tbsp mirin
Splash of sake (optional)
1 egg
2 Tbsp potato starch
Dredge
1 cup potato starch
½ tsp salt
To garnish
Mayo
Black sesame
Cabbage slaw
Lemon wedges
To start in a bowl add the chicken, garlic, ginger, soy sauce, mirin, sesame oil, black pepper and sake. Mix well and marinate for 30 minutes. To the chicken add the potato starch and egg. Mix again and set aside.
For the dredge, in a medium bowl add the potato starch and salt. Mix, coat the chicken well then set aside on a plate.
Heat your oil to 350 F then fry your chicken for 4-5 minutes until crispy and cooked through.
Serve with cabbage slaw, mayo and garnish with black sesame.
