NO BAKE- RASMALAI PISTACHIO CHEESECAKE
FOR THE CRUST
DIGESTIVE BISCUITS - 250 GRMS
PISTACHIOS - 250 GRMS
UNSALTED BUTTER- 1/4 CUP
GREEN FOOD COLOUR ( OPTIONAL)
GRIND THE BISCUITS IN A MIXER OR FOOD PROCESSOR TO COARSE CRIMBS. DRY ROAST THE PISTACHIOS , COOL AND GRIND TO A COARSE TEXTURE. ADD TO THE BISCUITS.
MELTED BUTTER AND ADD IT TO THIS MIXTURE, ADD A FEW DROPS OF GREEN FOOD COLOUR IF USING, MIX TILL INCORPORATED. KEEP 1TBSP OF THIS MIXTURE ASIDE FOR DECORATION.
TAKE A 8 OR 9 INCH LOOSE BOTTOM TIN AND SPREAD THE REST OF THE MIXTURE IN IT. PRESS WELL TO MAKE IT EVEN. REFRIGERATE TILL WE MAKE THE FILLING.
FOR THE FILLING
RASMALAI- 500 GRMS ( AROUND 10 PCS WITH THE FLAVOURED MILK)
CREAM CHEESE 500 GRMS
20 GRMS GELATINE OR 1 TSP AGAR AGAR POWDER
1/4 CUP WATER IF USING GELATIN
1 CUP WHIPPING CREAM ( I USE RICH'S NON DAIRY CREAM)
1 CAN ( 400 GRMS) CONDENSED MILK)
FEW SAFFRON STRANDS
ORANGE FOOD COLOUR ( OPTIONAL)
SQUEEZE OUT THE MILK FROM THE RASMALAI AND KEEP IT SEPERATELY.
BEAT THE CREAM CHEESE WITH AN ELECTRIC BEATER TILL SMOOTH, ADD THE CONDENSED MILK AND CONTINUE BEATING.
WHIP THE WHIPPING CREAM TILL STIFF PEAKS AND KEEP ASIDE.
IF USING GELATIN, SPRINKLE IT OVER THE WATER AND KEEP ASIDE FOR 5 MINS. ONCE SOAKED MICROWAVE IT FOR 30 SECS UNTILL COMPLETELY MELTED. ADD IT TO 200 ML OF THE RASMALAI MILK.
IF USING AGAR AGAR- HEAT 200 ML RASMALAI MILK WITH THE AGAR AGAR POWDER, KEEP STIRING AND BRING IT TO A GENTLE BOIL.
ADD THE RASMALAI MILK WITH GELATIN OR AGAR AGAR TO THE CREAM CHEESE MIXTURE , ADD HALF OF THE WHIPPED CREAM, SAFFRON AND FOOD COLOUR IF USING AND FOLD GENTLY TILL MIXED WELL.
LINE THE RASMALAI PIECES ON TOP OF THE SET PISTACHIO BASE, POUR THE CHEESECAKE FILLING ON IT AND KEEP IN FRIDGE OVER NIGHT OR MIN 5 TO 6 HRS TILL SET.
ONCE SET, DEMOULD AND DECORATE WITH THE REMAINING WHIPPED CREAM AND PISTACHIO CRUMBS
SERVE COLD
TIPS- USE A SPRING FORM OR LOOSE BOTTOM PAN FOR EASY DEMOULDING
ALWAYS USE UNSALTED BUTTER FOR DESSERTS
USE PLAIN UNSALTED PISTACHIOS
