Chicken Fesenjan by Usman and Salman's Food Joint
Chicken fesenjan also known as khoreshe fesenjan or simply fesenjan is a classic Persian stew made with walnuts and pomegranate molasses. The protein however, traditionally is cooked with duck but you can cook with chicken. This dish has a lovely sweet and tangy flavour to it, it is also a show stopper at dinner parties with friends and families. We were inspired by Sabrina Ghayour's recipe from her book Persiana and this is our take on this fantastic dish.

Cooking time: 2hrs
Ingredients:
1 large onion
1 garlic clove
500g chicken thighs (skin on is fine)
3/4 salt (according to taste)
Some black peppercorns
250g walnuts
100ml pomegranate molasses
1/2 tsp cinnamon powder
Pinch of nutmeg
1tbs caster sugar
1tbs plain flour
450ml of water
