Mutton paya is quite tough but if you cook it for a long time it will become very tender and all flavors in the sauce. It will make it all worth to wait.
Paya is a goat trotters is in the favorite list of any hardcore non vegetarian. It is the tastiest and healthiest recipe also. When sick it works wonders!
Serves hot with flaky layered paratha and steamed soft idly or Idiyappam (string hoppers)!!
INGREDIENTS:
- Paya / Goat leg (trotters) – 3no’s
Well cleaned and Cut into bite sizes
- Groundnut oil 2tbsp
- Bay leaf 1
- Cinnamon stick 2pc’s
- Black cardamom 1no
- Onion 3 no’s
- Tomato 2no’s
- Green chilli 2 no’s
- Ginger garlic paste 2tsp
- Turmeric powder ½ tsp.
- Chilli powder 2tsp
- Pepper powder ½ tsp.
- Cumin powder ½ tsp.
- Coriander powder 1 tbsp.
- Yogurt ½ cup
- Salt as required
- Coriander leaves.
Suggestions:
• Use big pressure cooker so the juices do not spray up from the whistle while cooking. Because it will minimize the mess.
• Cook on a low flame for 30 mins. Its take long time to cook. Just ignore the number of whistle while cooking. Just set a timer.
• Some body likes cashews, almonds with 3 tbsp of fresh coconut grind into fine paste add into gravy. But definitely it will turns into kurma texture and changes the taste of the flavor also.
• Here i recommend my way this type you will get full aroma and richness of paya.
