Lots of crunch. Refreshing. A tasty summer salad from Japan.
INGREDIENTS
1 burdock root, peeled & cut into matchsticks
1/2 daikon, peeled & cut into matchsticks
1 1/2 tbsp sesame oil
1 tbsp vinegar
1/2 tsp soy sauce
3 tbsp mayonnaise
2 tbsp sesame seeds
DIRECTIONS
1. Boil the burdock root in hot water for 2 minutes. Drain.
2. In a large bowl, whisk together the sesame oil, vinegar, and soy sauce. Add the burdock root and toss to coat.
3. Let burdock root cool.
4. Mix in mayonnaise.
5. Add daikon and sesame seeds. Toss until all daikon is coated and sesame seeds well distributed.
6. Chill.
