Ah, the California roll we know so well. Created by Hidekazu Tojo in Vancouver, Canada in 1971, sushi was not yet a popular food choice. Instead, North Americans' idea of Japanese food was tempura and teriyaki chicken. North Americans were hesitant to try seaweed, so Tojo created a roll where he put rice on the outside as well as innovated with ingredients that more ‘Western’ tastes would like. Let’s explore his innovative California roll creation for this episode.
