Batata Poha
Servings - 2 - 3
INGREDIENTS
Flattened rice - 150 grams
Water - 500 milliliters
Turmeric - 1/2 teaspoon
Sugar - 1 teaspoon
Salt - 1/2 teaspoon
Oil - 1 tablespoon
Potato - 130 grams
Oil - 1 1/2 tablespoon
Mustard seeds - 1 teaspoon
Cumin - 1 teaspoon
Onions - 80 grams
Curry leaves - 10 - 12
Green chili - 1 teaspoon
Roasted peanuts - 2 tablespoons
Coriander - for garnishing
PREPARATION
1. Wash 150 grams flattened rice.
2. Transfer it into a bowl, add 1/2 teaspoon turmeric, 1 teaspoon sugar, 1/2 teaspoon salt and mix well.
3. Heat 1 tablespoon oil in a heavy skillet, add 130 grams potato and saute the potatoes till light golden and crisp. Keep aside.
4. Heat 1 1/2 tablespoons oil in a heavy skillet, add 1 teaspoon mustard seeds, 1 teaspoon cumin, 80 grams onions and saute till they become translucent.
5. Add 10 - 12 curry leaves, 1 teaspoon green chili and saute for a minute.
6. Add 2 tablespoons roasted peanuts and stir well.
7. Add the poha or flattened rice and mix everything well.
8. Add the salted potatoes and mix well.
9. Cover it with lid and cook for 5 - 7 minutes.
10. Garnish with coriander.
11. Serve.
