DONDAKAYA PACHADI is a classic Andhra style spicy, tangy, hot & tasty Coccinia/Ivy gourd/Tindora/Tendli/Thondekayi/Kovakka chutney to pair with piping hot rice or roti. This veggie is available throughout the year, it is a good source of fiber & iron, so include it in your regular diet. Like all other Indian dishes, this has variations in preparation.
🧺INGREDIENTS🧺
🥒TO FRY & GRIND🥒
Dondakaya/Ivy gourd - 1 kg
Garlic - 22-24 medium cloves
Green chilies - 12-14, slit (adjust)
Cumin seeds - 2 tsp
Jaggery powder/crushed - 2 tsp (optional - to balance spiciness)
Tamarind - a big Indian gooseberry sized
Oil - 4 tbsp
Salt to taste

Oil - 1 tbsp
Mustard seeds - 1 tsp
Dried red chili - 3-4
Curry leaves - 1 sprig
Asafoetida/Hing - 1/4 tsp
