Reverse seared tri tip on the SnS kettle. I loaded up the slow and sear with Jealous Devil Chunx and a whiskey barrel smoke block for flavor.
We seasoned it up a few hours ahead of time but the day before would be better. We used Chili Joe (a coffee rub) and Herb Is The Word from Crave Spices. Also some extra salt from Redmond's Real Salt.
I used the MeatStick to monitor the temperature right from my phone. I pulled it around 110°. Then I rested the meat in the Crave butter I make.
Sliced up the meat with my favorite knife from Lampson the 7" Vintage Santoku.
Finally can't forget about the chimichurri. I don't have an exact recipe but here is what I used: parsley, red wine vinegar, olive oil from Prosperity Vineyards, onion, garlic, salt, red pepper, and black pepper.
this was so GOOD! The whiskey barrel Smoke Blocks from jealous Devil really did make a difference. Surprisingly to me I could actually taste the whiskey definitely give them a try!
