Several years back a lady at the farmers market asked me if I could make her a derby pie. Well I have never hear of derby pie, so she emailed me her recipe. Wow. It is so simple to make, I should have been making it for years. I now make it every Kentucky Derby even thou I could care less about the event. I'm not a horse person, or a track person, but I'm a pie person. And this special pie is great for once a year treat because it is so rich. Just make it.

Pie Crust:
In a medium bowl blend together 1/2 cup butter, 1 1/2 teaspoon sugar and 1/2 teaspoon salt. Once well blended add in 1 1/2 tablespoons milk and 1 egg yolk. Mix until sloppy and add in 1 cup flour. Stir until it forms a ball and then wrap in plastic wrap and chill for at least 1 hour. Roll out and line a pie tin. Set it aside.
Filling:
Melt 1/2 cup butter in the microwave for 30 seconds. To the melted butter add 1 cup sugar and 1 teaspoon vanilla. Stir until well combined. Next stir in 2 eggs. Once creamy add in 1/2 cup flour, 1 cup chopped pecans and 1 cup chocolate chips. Stir until well combined and pour into prepared pie shell. Bake at 325° for 1 hour. Allow to cool before serving.
