For the Blueberry Goo:
100g Blueberry's
40g Caster Sugar
Squeeze Lemon Juice
For the Lemon Sponge:
125g Unsalted Butter
125g SR Flour
125g Caster Sugar
1/4 tsp Bicarb of Soda
Zest of 2 Lemons
2 Eggs
2 tbsp Lemon Juice
For the Blueberry Icing:
200g Soft Unsalted Butter
320g Icing Sugar
3-4 tbsp of your Blueberry Goo
