Holi special recipe
Today I am going to share recipe of dhuska which is most popular food of jharkhand .Which is mostly made during festivals . It is mostly served with aloo chana ki sabji.
INGREDIENTS OF DHUSKA
2 cup arwa rice
1 cup chana dal
1/2 cup urad dal
5 green chilli
8-9 cloves garlic
2 inch ginger
salt as per taste
Pinch of turmeric ( for colour)
1 tsp cumine seed
Water as required
Oil for deep fry

INGREDIENTS FOR ALOO CHANA KI SABJI :-
Potatoes – 2 medium
Chana (black chickpeas) – 1 cup
Onions – 1 medium
Tomatoes – 2 medium
Garlic – 6-7 cloves
Ginger – 1/2 inch stick
Green chilies – 2
Salt – to taste
garam masala – 1 teaspoon
Cumin powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Bay leaf – 1
Mustard oil – 1/2 tablespoon
For garnishing:
Finely chopped coriander leaves

¤HOW TO MAKE DHUSKA
1. Soak Rice & Dal over night or for 4-5 hours.
2. Grind Soaked Rice & Dal with green chillis, ginger, garlic and very little water.
3. Add salt to the Dhuska Batter .
4. The batter should not be very thick nor too runny. Keep batter aside for 1-2 hour to set .
5. Add little bit turmeric and cumine to it.
6. Heat Oil In A kadai .
It should not be too hot.
7. Take a round spoon which we use for making dosa.
8. Drop The Dhuska Batter Gently In Oil
With the help of spoon gently release the batter into the oil.
9. Fry until golden from both sides.
Now Dhuska is ready serve it with aloo chana ki sabji .
*Tips
Do not add too much water to the dhuska batter as it will destroy it's texture

¤ How To Make Aloo Chana:
1. Heat mustard oil in a pressure cooker.
2. When the oil is hot, add bay leaf and finely chopped onions . Cook on medium heat till the onions turn a darker shade (about 6-7 minutes).
3.Add potato cubes and kala chana to the pressure-cooker. cook for 2-3 minutes and add finely chopped chilli ,ginger and garlic to it and cook for another 2-3 minutes .
4.Add the dry spice powders: turmeric powder, cumin powder, coriander powder, red chili powder, garam masala. Mix well. Continue to cook for another 5 minutes, or till the raw smell of the spices disappears.
5.Add tomato along with salt to taste.
6.Stir around, continue to cook till the tomato mix properly.
Mix well and cook the potatoes and kala chana with the masala for 5 minutes.
7.Add water and lock the pressure cooker lid. Cook on high heat till the first whistle, then lower the heat and cook for another 15 minutes.
Take the pressure cooker off the heat, let it cool till the lid comes off without force.
Aloo chana ki sabji is ready to eat.
