Jo gets nostalgic with a delicious french classic this week. These a perfect for breakfast, lunch, a light dinner or as "un goûter" - a traditional 4pm snack, often enjoyed after school. Although to be honest these a brilliant all the time...
What you'll need (for 8 crepes)
- 500ml Oat milk
- 3 eggs
- 250 buckwheat flour
- pinch of salt
- glug of cider (thank you Tom Broadhead for the cider)
For the filling
- Honey
- Goats cheese
- handful of mushroom
Method
Step 1: the batter - blend together oat milk, eggs, buckwheat flour, pinch of salt and add a splash of cider
Step 2: once it has reached a smooth pancake consistency - you can start heating the pan with vegetable butter and start the flipping job!
Step 3: the filling: simmer mushroom & some greens then on a medium heat fill the crepe with goat's cheese, honey and the mushroom mix until the crepe is crispy.
