Today, I'm smoking a whole Wagyu Picanha Beef Cap... Prime Rib Style! I started off by scoring the fat on the Picanha to open it up, and then layering it with my TX Brisket Rub, to give it that crunch. Throw it down on the center of the cooking grate for one hour to get a perfect medium-rare!
