Ingredients
Chicken -1kg
Jeerakasala rice -2cups
Onion -2
Garlic minced -15cloves
Ginger paste -1tbsp
Whole spices -
Ghee -3tbsp
Oil -1tbsp
Salt-
Chilli paste -11/2tbsp
or
Kashmiri chilli powder -1tbsp
Biriyani Masala -1/2tsp (opt)
Mint -coriander leaves
Tomato-1
Curd-3tbsp
Lemon Juice -1tbsp
Water -3cup
Method
Heat ghee d oil in a cooker or kadai ..
Add whole spices and saute for 2 minutes in medium heat .
Then add garlic and sauté ,now add onion , ginger & salt ..
Saute till light shade ..
Now add chilli paste or powder .,,saute till the raw smell goes ..
Then add tomato and cook ..
Then add leaves ,curd and lemon juice ..Mix well
To that add chikcen and mix well.. Cook for 5 minutes in that masala ..
Then add biriyani masala or garam masala (opt)
Now add water and chechk the taste .. Adjust the taste ..
Finally add soaked rice and mix well..
Allow to boil in high flame ..
Then close the cooker and cook in low flame for 15 minutes .
After 15 minutes switch off the gas and keep the cooker undisturbed in a cool place ..
Open the cooker after 20 minutes ..
So the tasty Ambur Biriyani is ready to taste ..
Serve with Raita ,sarlas and lemon dates pickle ..
