I cooked/smoked some beef ribs today on the weber kettle, using the BBQ Guru DigiQ-DX3 model controller. It took 7.5 hours to bring the internal meat temp up to 200 F. I coated the ribs with olive oil, then used coarse ground salt & black pepper for rub. We hit a stall in the temp at 170, took them off the smoker, basted with beef broth, and wrapped in butcher paper for the remainder of the cook. They rested about 20 minutes. Turned out very good.
