How to Make Creamy Mushroom Risotto
INGREDIENTS:
6 cups broth
1 1/4 cups Arborio Rice
1 pound sliced/quartered mushrooms
2-3 tbsp. olive oil
small finely diced onion
1/2 cup white wine
3-4 cloves minced garlic
sea salt
black pepper
2 tbsp. butter
1/3 cup Parmesan cheese
chopped fresh parsley
Heat broth to a boil and then turn down to a simmer.
In a skillet on medium heat add olive oil, mushrooms, minced
garlic, salt and black pepper. Cook and stir for 5-7 minutes
or until the mushrooms are done. Remove from the heat.
In a skillet on medium heat add olive oil, diced onions,
salt and black pepper and minced garlic.
Cook and stir for a minute and then add white wine.
Cook and stir for a minute or two or until wine is absorbed.
Add a little broth at a time. Enough to cover the rice.
Cook and stir constantly until liquid is absorbed and then
add a little more broth. Continue for 15-20 minutes or until
the rice is done. The risotto will be creamy.
Add mushrooms, chopped parsley and grated parmesan cheese.
Stir to combine and then add in butter. Cook and stir until
butter is melted.
Serve and enjoy.
