RECIPE:
Prep Time 20 minutes
Cook time 45 minutes
Total Time 1Hr 5 minutes
Makes 1 cup or Half Lb
Ingredients:
7 large Five Fingers
1 1/2 Cups of light brown sugar
Instructions:
Wash and cut them into small pieces
Add 3 Cups of light brown sugar
Cook over a medium heat until it reduces and turn into a golden brown colour and becomes a little firm in texture.
Separate the liquid over a sieve
Allow it to cool completely
Spread it out on a sheet pan
Dried carefully in the oven on the lowest setting until slightly crisp
Or dehydrate it until slightly crisp
Or spread it out on a sheet pan Then place the pan in the sun to be sun dried all day covered with a mesh covering to prevent flies and insects
Place it in the sun every day until it's fully dried and becomes a little crisp in texture.
Place it in a jar or a large bowl pour enough red wine to cover the fruits
Allow it soak for two weeks or longer
Blend it until it reaches a semi smooth consistency
Or to your preference
Place it in a Jar or a large bowl until ready to use.
Store it at room temperature for up to a year
The longer the fruits sits the better it will taste
Keep checking every two months to see if there's still enough moisture
If not add a little wine or rum
Mix well to combine
Use anytime to bake fruit cakes with
Double the recipe to make one Lb.
Notes:
Cook carefully over a low heat stirring in between cooking time to prevent burning 15 minutes before it finishes.
The liquid or syrup can be used to make drinks.
It tasted great.
