Ingredients:
- 1 kg ground pork (preferably with 20% fat)
- 15 g salt
- 4 g black pepper (2 teaspoons)
- 6 g fennel seeds (1 tablespoon, lightly crushed)
- 4 g paprika (2 teaspoons)
- 4 g garlic powder (2 teaspoons)
- 2 g onion powder (1 teaspoon)
- 4 g dried oregano (2 teaspoons)
- 4 g dried basil (2 teaspoons)
- 1 g dried thyme (1 teaspoon)
- 1 g crushed red pepper flakes (optional for mild heat, 1 teaspoon)
- 1 g cayenne pepper (optional for extra heat, 1 teaspoon)
Mix up
For the best flavour, cover the sausage mix and refrigerate it for 1-2 hours to let the flavours meld.
