Banana and Orange/Cranberry Muffins
21/2 cups (230 g) Almond flour
1 teaspoon Baking powder
1/2 teaspoon Baking soda
1/4 teaspoon baja gold salt
3/4 cup (144 g) Monkfruit sweetener
3 large eggs
8 oz ( 227 g) greek yogurt
2 teaspoons Vanilla extract
For Banana
2 teaspoons banana extract
1/2 cup (60 g) chopped pecans optional
For Orange/Cranberry
1 teaspoon Orange extract
1/2 cup (60 g) unsweetened dried cranberries or fresh cranberries
preheat oven to 350
spray muffin tin
mix dry ingredients and wet separately
then combine. Stiring till all dry ingredients are incorporated.
Fill muffin tins 3/4 full bake for 10-20 minutes. check with tooth pick. Depends on size of muffin tins and oven.
