To Make Kanchipuram Idli
Raw Rice - 1 Cup ( 250 Ml ) (Buy: [ Ссылка ])
Urad Dal -1 Cup ( 250 Ml ) (Buy: [ Ссылка ])
Curd - 4 Tbsp
Salt - 1 Tsp (Buy: [ Ссылка ])
Ghee - 2 Tbsp (Buy: [ Ссылка ])
Cashew Nuts - 1/4 Cup (Buy: [ Ссылка ])
Mustard Seeds - 1 Tsp (Buy: [ Ссылка ] )
Pounded Peppercorns - 1 Tbsp (Buy: [ Ссылка ])
Pounded Cumin Seeds - 1 Tbsp (Buy: [ Ссылка ])

Curry Leaves
Dry Ginger Powder - 1 Tsp (Buy: [ Ссылка ])

Oil - 3 Tsp (Buy: [ Ссылка ])
METHOD:
1. Take rice in a bowl, wash and soak in water for 3 hours.
2. Take urad dal in another bowl, wash and soak in water for 3 hours.
3. Strain off the excess water, grind rice and urad dal separately in a mixer jar into coarse mixtures.
4. Now blend these two coarsely ground rice and urad dal. Add water, mix and ferment for 8 hours.
5. After fermenting the batter, add curd and salt. Mix well.
6. For the tempering, add ghee to a small pan. Fry the chopped cashewnuts until golden brown and transfer to the batter.
7. Add oil to the same pan and saute mustard seeds. Once the mustards start splattering, add pounded peppercorns, pounded cumin seeds, chopped ginger, asafoetida, curry leaves and saute.
8. Once done, turn off the stove and transfer the tempering to the batter. Add dry ginger powder and mix it all again.
9. Fill the batter in greased cups upto 50% and then steam cook them for 20 mins.
10. After the idlis are cooked, let them cool down and bit and remove them from the cups.
11. Serve the Kanchipuram Idlis hot and nice with spicy tomato chutney, coconut chutney and sambar by the side.
Idlis are known for their comforting taste and texture. They are so good that they can be had at any given time in a day as a simple yet filling tiffin.
