6 to 8 (5 ounce) bone-in, skin-off chicken thighs and or legs. Use can also use boneless. Leave a bit of fat on the thighs.
Salt to taste
Black Pepper to taste
*Coating Mixture*
¼ tsp Cayenne pepper
1 Tbsp Sweet Paprika
1 Tsp dried Thyme
3 Tbsp All-purpose flour
2 Tbsp Olive oil, to taste
*Vegetable Base*
2 medium yellow onions, thin sliced
1 Sweet Bell Pepper, I used half a red and yellow one.
3 to 5 cloves Garlic, minced
1 Tbsp Tomato paste
1 ½ tsp Salt, or to taste
½ tsp Ground Black pepper, or to taste
3 Tbsp sweet Hungarian paprika
1 cup finely chopped or diced can Tomatoes
2 cups Chicken Broth, low-sodium
⅔ to 1 cup full-fat Sour Cream, at room temperature. I used 5% fat sour cream and it came out tasting the same.
2 Tbsp All-purpose flour
2 to 3 Tbsp of flat-leaf Parsley
