Roasted Cauliflower Lasagne (Serves – 4 to 6)
Ingredients
6 Lasagne Sheets
50 gm Pizza Cheese – Grated, few Olives
Ingredients for Tomato Filling
2 tbsp Oil
6 Flakes Garlic – Grated (1 tbsp)
1 Onion – Chopped
1 tsp Nita Mehta Kashmiri Mirch Powder
6 Tomatoes – Chopped
½ tsp Salt, Pepper to Taste
1 tsp Nita Mehta Jeera Powder
A few Basil Leaves
Method for Tomato Filling
Heat Oil and add Garlic. Add onion and cook till golden. Add Nita Mehta Kashmiri Mirch Powder. Add tomatoes and salt. Cover and cook for 10 min. Add Nita Mehta Jeera Powder, salt and pepper. Cook till oil separates. Add basil leaves and remove from fire.
Ingredients for Roasted Cauliflower
1 Small Cauliflower – Cut into Flat Florets
Marinade
2 tbsp Oil
2 tbsp thick or hung Yogurt (Dahi)
2 tbsp Besan
1 tbsp Ginger Garlic Paste
1 tsp Nita Mehta Dhania Powder
½ tsp Salt, 1/2 Nita Mehta Red Chilli Powder
¼ tsp Nita Mehta Haldi Powder
Method for Roasted Cauliflower
Heat 1tbsp oil and brush pan nicely with oil. Add cauliflower and cook covered for 2-3 minutes till brown on the underside. Turn and cook the other side also for 2 minutes. Remove from pan.
Ingredients for Eggplant Layer / Zucchini Layer
200 gm Small Baingan or 1 Medium Zucchini
Method for Eggplant Layer / Zucchini Layer
Slice lengthwise and sprinkle salt and keep aside for 10 min.
Heat 1 tbsp oil and brush pan with it. Sprinkle Nita Mehta Red Chilli Powder and lay the baingan or zucchini. Sprinkle Nita Mehta Red Chilli Powder again. Cook covered for 5 min, turning side in between to brown on both sides.
Ingredients for White Sauce
2 tbsp Butter
1 tbsp Grated Garlic
2 tbsp Maida
2 Cup Milk at Room temp.
½ tsp Salt, ¼ tsp Pepper, ½ tsp Chilli Flakes
Method for White Sauce
Heat butter and add garlic. Add Maida and stir till it just starts to change colour. Remove from fire and wait for 2 minutes. Add milk at room temp and stir continuously till thick. Add salt, pepper and chilli flakes.
Method for Lasagne Sheets
Boil a pan of water with 2 tsp salt and 1 tbsp oil.
Add 2-3 sheets at a time- boil for 2 min till they bend properly. Remove from water and boil all sheets in the same way.
To Assemble
Spread 3-4 tbsp white sauce in a dish. Put sheets, keeping a little gap in between them. You can cut sheets with scissor to fit the dish.
Put 1 heaped tbsp tomato filling on each sheet and spread.
Put eggplants/zucchini. Put cheese.
Repeat sheet, tomato, cauliflower and cheese.
Put the third layer of lasagne sheet, and remaining tomatoes.
Cover nicely with white sauce, cheese, olives.
Bake covered with foil at 180o C for 45 min
