Recipe
3 Eggs
1 1/2 lbs. Chicken thighs chopped into smaller pieces
3 cups Cooked white rice
1/3 cup Teriyaki sauce + more for garnish (optional)
2 tbsp Soy sauce
2 tbsp oyster sauce
4 Garlic cloves minced
1/2 tsp Grated garlic
1 Medium chopped onion
12oz Frozen mixed vegetables
Salt and pepper to taste
Green onions for garnish (optional)
* In a skillet with oil add eggs and scramble. Remove from pan on a separate dish and reserve.
* Next add more oil if necessary, add chopped chicken thighs, season with salt and pepper cook fully, about 10-12 minutes. Once cooked add teriyaki sauce, mix to combine well. Remove chicken to a separate dish and reserve.
* To the same skillet add more oil if needed. Add minced garlic and ginger, cook for 20 seconds, next add cooked rice, break up with spatula if needed. Add soy and oyster sauce, mixed veggies and onions. Mix well and cook for 8-10 minutes.
* Next add cooked chicken and scrambled eggs. Mix to combine, cook an additional 3-5 minutes, and serve . You can garnish with more teriyaki sauce and or green onions. Enjoy!!
