homemade mounds candy bars 🫶🏼 they’re gluten free, dairy free, paleo, and refined sugar free, and so easy to make! honestly they taste better than the real thing…😍
ingredients
•2 cups unsweetened coconut flakes/shreds
•1/4 cup raw honey or pure maple syrup
•1/4 cup coconut oil
•1/4 cup full fat canned coconut milk
•6oz dark or semi-sweet chocolate (i use dairy free)
instructions
1. first, melt the coconut oil.
2. next, make the coconut filling: add the shredded coconut, coconut milk, honey/maple syrup, and melted coconut oil to a food processor and process for about a minute, scraping down the sides as needed.
3. once smooth, add the coconut filling to an 8x5 loaf pan lined with parchment paper and smooth it out. place in the freezer to harden for several hours.
4. once frozen, remove the coconut filling from the freezer and slice into 6 bars.
5. melt the chocolate in the microwave or on the stovetop (i recommend adding 1 tsp of coconut oil to the chocolate to help it melt smoothly and thin it out).
6. once melted, coat each coconut bar in melted chocolate and place on a tray lined with parchment paper. place in the fridge to harden for several hours.
7. once hardened, remove from the fridge. remove any excess chocolate and enjoy! store in the fridge or freezer.
