Here i use december dripper.for bloom(5*coffee) set it in zero mark(valves are closed)and for remaining of brew in 1 mark point (least valves open).The main fault of december was its leakage,but for my purpose it works great.I tried 35clicks grind size on comandante,but by decreasing flow rate,I increase contact time.Result is great!
Coffee is carbonic maceration caturra from Colombia.
20.3/ 300 ratio, Temprature:95C
Bloom :100ml/stir vigorously with wdt and wait 90sec
Tds:1.46 ,Ey:18.02%
Total brew time:4min10sec
Body of beverage is medium.
Despite low ey, beverage is really tasty.I like it.It is fruity,with chocolate and wine notes,no bitters,no astringency .
