Carrot Cake is a rich and moist spice cake, full of grated carrot, and toasted nuts. A lush cake that tastes like Christmas within every bite.
🛒Ingredients Required
All-purpose flour - 2 cups
Baking soda - 2 tsp
Salt - a pinch
Cinnamon pd - 2 tsp
Egg - 4nos
Oil - 1 ¼ cups
Sugars - 2 cups
Vanilla essence - 2 tsp
Grated carrots - 3 cups
Nuts - ½ cup
Raisins - ½ cup
How to make carrot cake at home
1. Preheat the oven to 350 degrees Fahrenheit (176C). Grease cake tin and line the bottom with parchment paper.
2. In a medium-size mixing bowl, add flour, baking soda, salt, cinnamon and mix all the dry ingredients together.
3. Add in eggs, and a wet mix of oil, sugar, and vanilla, followed by carrots, nuts, and raisins.
BAKE CAKE
1. Divide the batter between the prepared cake pans. Bake for 45 minutes and check by inserting a toothpick into the center of the cake it should come out clean.
2. Cool cakes in pans for 15 minutes then turn out onto cooling racks, peel off the parchment paper and cool completely.
CREAM CHEESE FROSTING
1. In a large bowl, beat cream cheese with a handheld mixer on medium speed until creamy, about 1 minute.
2. Beat in the powdered sugar, a 1/4 cup at a time until fluffy. Pour in the cream and beat on medium speed for 1 minute. Chill covered until ready to frost cake.
3. When the cake layers are completely cool, frost the top of one cake layer, place the other cake layer on top. And decorate
