Here’s my recipe for making German spinach-dumplings, in order to use leftover stale bread! :)
They are a great way to show even old, stale bread the respect it deserves and other than that they are delicious! It’s also a great recipe to cook with your friends because it’s easy, fun to make and there are only few, cheap ingredients! Try for yourself and let me know what you think! ;)
Spinach dumplings:
Ingredients (for 3-4 people):
- 250g breadcrumbs (if you use fresh bread, reduce amount of milk)
- 1 onion (100g)
- 1 ts olive oil/ margarine/ ghee/ butter to sauté the onion
- Spices: turmeric, black pepper, garlic powder, cardamom
- 250 ml your preferred milk
- 2 eggs
- 1 ts salt
- 200g frozen spinach
- 60g flour (or to increase protein: 30g neutral protein powder + 40g flour)
Mushroom-leek-sauce:
- 1 ts oil/margarine/butter/ghee
- 1 leek
- 400g mushrooms
- 200g cream
- 150ml vegetable broth (1-2 ts broth powder + 150 ml water)
- 1 ts oregano (and add salt to taste)
- Optional: splash of white wine
