Potato wedges cooked with the Vortex on a Weber Kettle. I also show how to setup the grill for this cook with charcoal baskets and the Slow ‘N Sear.
Instructions:
Russet potatoes washed, then cut into wedges (6-8 depending on the potato size), then tossed in olive oil. Season to taste. You can you simple salt and pepper, or any seasoning or rub you like. Setup grill for indirect cooking at high heat (500+). Cook wedges for 25-35 minutes, checking after 20 minutes for doneness then every 5 minutes until cooked through. Wedges should be very soft all the way through when they are done. Leave on the grill to desired brownness.
