香港地道小食多不勝數,深受市民和旅客喜愛,是本地美食版圖的重要一環。職業訓練局(VTC)機構成員中華廚藝學院(CCI)為保存和弘揚本港飲食文化,先後出版了四冊「香港地道小食」系列叢書,除了講述不同地道小食的由來外,更專誠訪問多家本地知名商號,講解製作不同小食的技巧與秘訣。
另外,學院還安排了教導員拍攝其中12款小食的製作過程,希望藉此把各種地道小食的傳統味道一直傳流下去。

中華廚藝學院(CCI)開辦了兩個各爲期6個星期的全日制課程-「香港地道中式甜品證書」及「香港地道特色小食證書」課程。每個課程將涵蓋約30款美食的製作方法,當中並介紹地道小食文化發展、廚房工具運用、食材應用等全面職場知識,旨在裝備學員投身小食製作及中式廚務行業,打好廚藝基礎。

Hong Kong’s unique street foods are rooted deep in the hearts of locals and tourists, a staple in everyday life. The Vocational Training Council’s (VTC) member institution, Chinese Culinary Institute (CCI) has a mission to preserve local food and culture. This series on ‘Hong Kong’s Local Specialty’ showcases different local foods and the stories of the people behind it. CCI instructors have also documented 12 types of snacks to preserve the cooking methods for future generations to reference and replicate. If you love Hong Kong culture, this documentary will take you on a cultural journey.
The Chinese Culinary Institute (CCI) offers two six week courses on ‘Certificate in Hong Kong Local Chinese Desserts” and “Certificate in Hong Kong Local Specialty Savoury Snacks”. Each course covers 30 recipes including introductions and history of local food, crockery and ingredients, allowing students to build a strong understanding in local food culture.
